Sauce

  • 0.25 cup reduced sodium soy sauce gluten-free if needed
  • 2-3 tablespoons hoisin sauce
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 2-3 cloves garlic finely minced
  • 1 teaspoon dried ginger
  • 1.5 teaspoons freshly grated ginger

Main Ingredients

  • 1.5 pounds boneless skinless chicken breasts diced into bite-sized pieces
  • 4 cups cooked jasmine rice divided
  • 1 cup shelled edamame cooked; divided
  • 1 cup cucumber diced small; divided
  • 1 cup shredded carrots divided
  • 0.33 cup fresh cilantro finely minced; divided
  • 0.33 cup pickled red onions optional; divided
  • lime wedges optional but recommended for serving
  • Sriracha mayo optional for serving
  • sesame seeds optional for garnishing
  • red pepper flakes optional for garnishing
  • chili oil optional for garnishing
  • salt and pepper optional and to taste

Instructions
 

Preparation

  • In a medium mixing bowl, whisk together the soy sauce, hoisin sauce, lime juice, honey, minced garlic, and ginger until fully combined. Set aside.
  • Heat a large skillet over medium-high and add the olive oil and diced chicken. Cook for about 5 minutes, stirring often until the chicken is cooked through.
  • Lower the heat and carefully pour in your prepared sauce. Toss the chicken in the bubbling sauce for 2 to 3 minutes until coated.

Notes

Serve with lime wedges and optional garnishes like Sriracha mayo and sesame seeds.
