Ingredients
  

Dressing

  • ½ cup sour cream
  • ½ cup buttermilk
  • 2 tablespoons extra virgin olive oil plus more for grilling
  • 2 teaspoons Champagne vinegar
  • ½ teaspoon fine grain sea salt
  • 1 teaspoon onion powder
  • ½ teaspoon garlic powder
  • 2 tablespoons minced chives plus more for serving
  • 1 tablespoon sriracha or curry paste, or salsa negra

Salad

  • 1-2 heads iceberg lettuce for grilling
  • crunchy kale chips for serving
  • toasted nuts for serving

Instructions
 

Dressing Preparation

  • Combine the sour cream, buttermilk, olive oil, vinegar, salt, onion powder, garlic powder, chives, and sriracha in a jar. Stir until well combined.

Grilling Lettuce

  • Prep your grill by getting it nice and hot. Cut the iceberg lettuce into quarters through the core and stem. Brush each wedge with olive oil and grill cut side down for 30-45 seconds. Turn and grill for another 30-45 seconds. Remove and serve.

Serving

  • Serve drizzled with the dressing and topped with crushed kale chips, toasted nuts, and additional chives.

Notes

Use apple cider vinegar as a substitute for Champagne vinegar. Thin the dressing with buttermilk if desired. Leftover dressing keeps refrigerated for 4-5 days.
