Ingredients
  

Biscuit Dough

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 6 tablespoon unsalted butter cold cubes
  • 1 cups whole milk

Veggie Filling

  • 1 cup diced yellow onion
  • 1 cup carrots sliced or diced
  • 1 cup celery sliced or diced
  • 1 cup mushrooms chopped
  • 3-4 cloves garlic minced
  • 0.33 cup all-purpose flour spooned & leveled
  • 2 teaspoon fresh or dried thyme
  • 2 cups vegetable broth
  • 2 cups mixed vegetables such as peas, broccoli, cauliflower
  • 2 tablespoon fresh parsley chopped, for garnish
  • 1 teaspoon salt for seasoning

Instructions
 

Preparation

  • Preheat your oven to 400°F (204°C).
  • In a large bowl, mix together the flour, baking powder, and salt for the biscuit dough.
  • Cut in the cold butter until the mixture resembles coarse crumbs.
  • Add 1 cup of whole milk and stir until just combined.
  • Melt the quarter cup of butter in a skillet over medium heat.
  • Add diced onion, carrots, and celery; cook for 5-7 minutes until softened.
  • Stir in mushrooms and garlic; cook for another 3-4 minutes until mushrooms are tender.
  • Sprinkle the ⅓ cup of flour over the veggie mixture and stir well.
  • Pour in vegetable broth and 2 tablespoons of milk, adding thyme and salt. Simmer until thickened.
  • Pour the veggie mix into a greased casserole dish.
  • Dollop or spread the biscuit dough on top.
  • Bake for 25-30 minutes until the biscuits are golden.
  • Let cool for a few minutes before serving.

Notes

Let the casserole rest for a few minutes after baking to allow the filling to set a little before serving.
