Ingredients
  

For the Blackberry Velvet Cake

  • 2 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 0.5 cups black cocoa powder
  • 0.5 cups cocoa powder
  • 1 cup unsalted butter softened
  • 3 large eggs
  • 2 tsps vanilla extract
  • 0.25 cups coconut oil or olive oil
  • 2 tsps baking powder
  • 1 teaspoon baking soda
  • 0.25 tsps salt
  • 0.25 cups fresh blackberry puree
  • 1 cup buttermilk
  • purple or red food coloring optional

For the Blackberry Filling

  • 2 cups fresh or frozen blackberries
  • 0.25 cups granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 stick cinnamon
  • 2 tablespoon water

For the Chocolate Ganache

  • 1 cup heavy cream
  • 1.5 cups semi-sweet or dark chocolate chopped
  • 1 tablespoon unsalted butter optional

Instructions
 

Prepare the Cake Layers

  • Preheat your oven to 350°F (175°C) and prepare your baking pans.
  • In a mixing bowl, combine flour, sugars, cocoa powders, baking powder, baking soda, and salt.
  • In another bowl, cream butter and sugar until light and fluffy.
  • Mix in eggs, vanilla, and oils until well combined.
  • Alternate adding the dry ingredients and buttermilk, mixing until just combined.
  • Fold in blackberry puree and food coloring if using.
  • Divide batter evenly among prepared pans and bake for 30-35 minutes.
  • Let layers cool before removing from pans.

Make the Blackberry Filling

  • In a saucepan, combine blackberries, sugar, lemon juice, cornstarch, cinnamon stick, and water.
  • Cook over medium heat, stirring until thickened, about 5-10 minutes.
  • Remove the cinnamon stick and allow filling to cool.

Prepare the Ganache

  • Heat heavy cream in a saucepan until it begins to simmer.
  • Pour over chopped chocolate in a bowl and let sit for a few minutes.
  • Stir until smooth and add butter if using, mix until incorporated.

Assemble the Cake

  • Place one cake layer on a serving plate and spread a layer of blackberry filling on top.
  • Add the second layer and repeat with filling, then top with the third layer.
  • Pour ganache over the top, letting it drip down the sides.

Decorate and Serve

  • Garnish with fresh blackberries or edible flowers if desired.
  • Slice and serve to your guests.

Notes

Cake can be made a day in advance and stored properly until serving.
