Ingredients
  

  • 1 lb cod or other white fish Substitute with orange roughy, grouper, or haddock if cod is not available.
  • kosher salt to taste
  • fresh cracked pepper to taste
  • 35 crackers Ritz crackers crushed
  • 6 tablespoon unsalted butter melted
  • 2 teaspoon fresh parsley minced
  • 2 teaspoon fresh lemon juice
  • ½ teaspoon garlic powder
  • 2 teaspoon freshly grated Parmigiano-Reggiano cheese

Instructions
 

  • Heat oven to 375°F.
  • Lay the fish in a 13×9 baking dish. Season very lightly with salt and pepper.
  • Mix the remaining ingredients and sprinkle over the cod.
  • Bake at 375°F for 8-12 minutes (depending on the thickness of the fish) until the fish flakes with fork and crumbs are golden.

Notes

If cod is not available, fish substitutions include any mild white fish such as orange roughy, grouper, and haddock.
