Ingredients
  

  • 2 whole Vine ripe tomatoes diced
  • 5 cloves Garlic diced
  • 10 leaves Basil chopped
  • 2 tablespoon Olive oil
  • 2 tablespoon Balsamic Vinegar
  • cup Mozzarella Cheese
  • Salt
  • Pepper
  • Parmesan Cheese for topping (optional)

Instructions
 

  • Preheat oven to 400 degrees F. Slice your baguette/bread into thick slices with a serrated knife. Place the slices of bread onto a large baking sheet. Drizzle a bit of olive oil on top and sprinkle with salt and black pepper. Toast in the oven for about 10-15 minutes.
  • While the bread is toasting, make the tomato topping. Combine diced tomatoes and garlic, mozzarella, chopped basil, olive oil, balsamic vinegar, and salt and pepper and toss together in a bowl. Place in refrigerator until ready to use. Cut a garlic clove in half and rub each piece of the toasted baguette.
  • Use a slotted spoon to spoon tomato mixture on top of the bread. This helps prevent too much liquid getting onto the bread. Top with flake salt, balsamic glaze, grated parmesan, and flake salt!

Notes

Use the freshest ingredients possible for the best flavor. Consider toasting the bread on a grill for enhanced taste.
