  • 3 lb spaghetti squash one medium squash
  • ½ teaspoon olive oil or avocado oil
  • salt and pepper to taste
  • 2 cups chopped fresh broccoli
  • 2-3 cloves garlic
  • ½ cup heavy cream
  • 1 tablespoon cream cheese optional but delish!
  • ¼ teaspoon garlic powder
  • ½ cup freshly grated parmesan cheese
  • ¼ cup freshly grated cheddar cheese medium or sharp, plus extra for topping

Instructions
 

How to Roast Spaghetti Squash

  • Preheat oven to 400°F.
  • Microwave the spaghetti squash for 3-5 minutes to soften it slightly.
  • Cut the ends off of the squash for stability, then cut it in half lengthwise.
  • Scoop out the seeds, rub cut sides with oil, and season with salt and pepper.
  • Place cut side down on a baking dish and roast for 35-40 minutes or until tender.
  • Flip the squash over and fluff the inside with a fork after removing from the oven.

While the Squash Cooks, Make the Sauce

  • Chop broccoli into very small pieces and mince garlic.
  • In a pot, sauté broccoli and garlic in oil until bright green and tender.
  • Add heavy cream and cream cheese; mix well.
  • Once bubbling, remove from heat and whisk in parmesan cheese. Season with garlic powder, salt, and pepper.
  • Pour sauce over fluffed squash, stir and top with extra cheese if desired.

Meal Prep Option

  • Roasted spaghetti squash can be stored in the fridge for 3-4 days for meal prep.
  • Serve casserole-style if preferred instead of in the squash boat.
