- 1 tablespoon olive oil
- 15 oz Italian sausage crumbled
- 8 oz rigatoni uncooked
- 1 cup chicken broth
- 1 cup heavy cream
- 4 cloves garlic minced
- 1 teaspoon Italian seasoning or Herbs from Provence
- 15 oz tomato sauce such as tomato pasta sauce or marinara
- 5 oz fresh spinach
- salt to taste
- coarsely ground black pepper to taste
- red pepper flakes to taste
Instructions
Preparation Steps
- Heat 1 tablespoon of olive oil on medium heat in a large skillet.
- Add crumbled sausage and cook for about 5 minutes until cooked through. Drain any grease.
- Add rigatoni, chicken broth, heavy cream, garlic, Italian seasoning, and tomato sauce to the skillet.
- Bring to a boil, cover, and allow to cook for 10 to 15 minutes until pasta is al dente.
- Stir frequently to prevent sticking.
- Add fresh spinach and cook, stirring for a couple of minutes until wilted.
- Alternatively, remove from heat and let spinach wilt in residual heat for 4 minutes.
- Cook longer if a thicker sauce is desired.
- Mix well, season with salt, black pepper, and red pepper flakes to taste.
Notes
Use your best judgment about the salt; adjust based on the saltiness of the sausage.
