For the Turkey
- 1.1 pounds Turkey breast (skinless) cut into strips
For the Mushrooms
- 7-9 ounces Baby button mushrooms sautéed
For the Sauce
- 3 tablespoons Olive oil used to sauté mushrooms
- 1.5 tablespoons Butter creates a velvety base
- 1.5 tablespoons All-purpose flour thickens the sauce
- 0.5 teaspoon Onion granules adds subtle flavor
- 2 tablespoons Fromage blanc/fromage frais or low-fat sour cream for creamy richness
- 0.833 cups Vegetable/chicken stock provides a flavorful base
- Fine sea salt and pepper to taste
Method
In a large pan, warm olive oil over medium-high heat. Add the baby button mushrooms and sauté for about 5 minutes until golden brown. Transfer mushrooms to a bowl using a slotted spoon.
In the same pan, add the seasoned turkey strips. Cook for about 3-4 minutes until turkey is no longer pink. Lift turkey out with a slotted spoon and place it in a separate bowl.
Melt butter in the pan. Whisk in flour until thickened. Gradually pour in stock, whisking constantly until thick, smooth, and creamy. Stir in onion granules, remove from heat, and mix in fromage blanc.
Add sautéed mushrooms and cooked turkey back into the pan. Stir gently to combine. Taste and adjust seasoning with salt and pepper if needed. Serve hot.
