Ingredients
  

Chicken

  • 3 chicken breast fillets chopped into bite-size chunks

Breading

  • 5 tablespoon vegetable oil
  • 2 eggs lightly beaten
  • 3 tablespoon cornflour (cornstarch)
  • 10 tablespoon plain flour (all-purpose)
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon garlic salt
  • 2 teaspoon paprika

Sauce

  • 1 tablespoon sesame oil optional
  • 2 cloves garlic peeled and minced
  • 1 tablespoon Chinese rice vinegar white wine vinegar will work too
  • 2 tablespoon honey
  • 2 tablespoon sweet chilli sauce use more or less depending on spice level
  • 3 tablespoon ketchup
  • 2 tablespoon brown sugar
  • 4 tablespoon soy sauce

To Serve

  • boiled rice
  • 2 tablespoon sesame seeds
  • small bunch spring onions/scallions chopped

Instructions
 

Cooking Steps

  • Heat the oil in a wok or large frying pan until very hot.
  • Whilst the oil is heating, place the egg in one shallow bowl and the cornflour in another. Add the flour, salt, pepper, garlic salt and paprika to another bowl and mix together.
  • Dredge the chicken in the cornflour, then dip in the egg, and finally dredge in the seasoned flour. Add to the wok and cook on high heat for 6-7 minutes, turning occasionally until well browned. You may need to cook in batches.
  • Add all sauce ingredients to the hot wok, stir and bubble until the sauce reduces by about a third (2-3 minutes). Add the chicken back in and toss to coat. Cook for 1-2 minutes.
  • Turn off the heat, divide between bowls. Serve with boiled rice, topped with sesame seeds and spring onions.

Notes

Double these ingredients if you want extra sauce, rather than just coating the chicken. Serve with boiled rice or special fried rice.
