  • 2 pounds shrimp peeled and deveined

Vegetables

  • 1 small English cucumber diced
  • 3 green onions thinly sliced

Creamy Lime Dressing

  • β…“ cup mayonnaise
  • β…“ cup sour cream
  • 1 large lime zested and juiced
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon Dijon mustard
  • 1 clove garlic minced
  • ΒΌ teaspoon kosher salt

Preparation

  • Make the dressing by stirring together mayonnaise, sour cream, lime zest and juice, dill, mustard, garlic, and salt. Set aside or chill in the fridge.
  • Bring a pot of water to a boil. Add the shrimp and cook for 2 to 3 minutes until pink and fully cooked.
  • Prepare an ice water bath while the shrimp cook. Use a skimmer to transfer shrimp to the ice bath. Let cool for 3 minutes and then drain in a colander. Chop into bite-sized pieces.
  • In a mixing bowl, combine chopped shrimp, green onion, diced cucumber, and dressing until creamy.

Notes

Make sure you've got a good, juicy lime. If using smaller Mexican or Persian limes, consider using two.
