Ingredients
  

For the Chicken

  • 2 pieces Boneless, skinless chicken breasts
  • 1 tablespoon Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Paprika
  • ½ teaspoon Black pepper
  • ½ teaspoon Salt

For the Pasta Salad

  • 8 ounces Pasta (rotini, penne, or farfalle)
  • ½ cup Mayonnaise
  • ½ cup Grated Parmesan cheese
  • ½ cup Caesar salad dressing
  • 1 tablespoon Lemon juice
  • 1 teaspoon Dijon mustard
  • 2 cloves Minced garlic
  • ¼ cup Milk or cream

For the Veggies

  • 2 cups Chopped romaine lettuce
  • 1 cup Cherry tomatoes, halved
  • ½ cup Red onion, thinly sliced

For the Topping

  • 1 cup Croutons

Instructions
 

Cooking Instructions

  • Pound the chicken breasts to about ½ inch thickness for even cooking.
  • Season the chicken with a mixture of garlic powder, onion powder, paprika, black pepper, and salt.
  • Cook the chicken in a skillet with olive oil over medium-high heat for 5-7 minutes on each side.
  • Let the chicken rest for 5 minutes, then dice into bite-sized pieces.
  • Boil salted water in a large pot, then add pasta and cook for 8-10 minutes until al dente.
  • Drain and rinse pasta with cold water to stop cooking; spread out to cool.
  • Whisk together mayonnaise, Parmesan, Caesar dressing, lemon juice, Dijon mustard, minced garlic, black pepper, and salt in a large bowl.
  • Add cooled pasta to the dressing mixture and toss to coat evenly.
  • Incorporate diced chicken, chopped romaine, cherry tomatoes, and red onion; toss gently.
  • Cover and refrigerate for at least 30 minutes to meld flavors.
  • Before serving, toss in croutons for crunch.

Notes

For a lighter version, substitute mayonnaise with Greek yogurt.
