For the Cream Cheese Frosting

Cake Preparation

  • Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking pan.
  • Whisk together flour, cinnamon, baking soda, baking powder, and salt until smooth and lump-free.
  • Mix sugar, vegetable oil, eggs, and vanilla in a well created in the dry mixture. Stir until smooth.
  • Fold in shredded carrots, flaked coconut, chopped walnuts, and crushed pineapple gently.
  • Pour the batter into the greased pan and bake for 45 minutes or until a toothpick comes out clean.
  • Cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.

Frosting

  • Beat the cream cheese until smooth, then gradually add powdered sugar until desired sweetness is reached.
  • Frost the cooled cake generously with cream cheese frosting, slice, and serve.
