For the Batter
- 1 cup All-purpose flour
- 1 cup Dashi broth can be substituted with water
- 2 large eggs
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 2 teaspoons Baking powder
- 1 tablespoon Soy sauce
For the Filling
- 1 cup Shredded cabbage
- ¼ cup Chopped green onions
- 4 slices Cooked bacon or pork belly can substitute with mushrooms for a vegetarian option
- ½ cup Grated cheese optional
For Serving
- ½ cup Okonomiyaki sauce
- ½ cup Japanese mayonnaise
- 2 tablespoons Aonori (seaweed flakes)
- 2 tablespoons Katsuobushi (bonito flakes)
Preparation
In a large mixing bowl, whisk together the all-purpose flour, dashi broth, eggs, soy sauce, and baking powder until smooth and well blended.
Gently add in the shredded cabbage, chopped green onions, cooked bacon or pork belly, and cheese if using. Season with salt and pepper, then mix until evenly combined.
Preheat your waffle maker and lightly grease it with vegetable oil.
Pour enough batter into the waffle maker to cover its surface. Cook according to the manufacturer’s instructions, typically about 5-7 minutes, until golden brown and crispy.
Remove the waffle and repeat with the remaining batter.
Drizzle your waffles with okonomiyaki sauce and Japanese mayonnaise, then sprinkle aonori and katsuobushi on top.
