  • ½ cup vegetable oil
  • 3 large whole eggs

Instructions

Cake Preparation

  • Prepare the white cake mix according to package directions using water, oil, and eggs. Fold in rainbow jimmies before pouring batter into a pan.
  • Bake as directed and allow the cake to cool completely on a wire rack.
  • Crumble the cooled cake into a large mixing bowl until fine and uniform.
  • Add two tablespoons of frosting to the cake crumbs and mix until combined.
  • Roll the mixture into uniform 1-inch balls and place onto a parchment-lined baking sheet.
  • Dip the tip of each lollipop stick into melted chocolate and insert it into the cake balls to secure.
  • Chill the cake pops in the refrigerator for at least one hour.
  • Melt the remaining candy melts and divide into bowls for different colors of pastel food coloring.
  • Dip each chilled cake pop into the melted candy until fully coated, then add sprinkles before it sets.
  • Place finished cake pops in a cake pop stand or Styrofoam to dry completely.

Notes

Ensure the cake is completely cool before crumbling to avoid a soggy texture. Use a small cookie scoop for uniform cake ball sizes. Let the coating harden before drizzling additional colors.
