Ingredients
  

Steak

  • 1.5-2.5 pounds flank steak

Marinade

  • 0.5 cup olive oil
  • 0.33 cup reduced sodium soy sauce
  • 0.25 cup balsamic vinegar
  • 2 tablespoons lemon juice
  • 2 tablespoons brown sugar
  • 1.5 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • 1 teaspoon dried basil
  • 1 teaspoon black pepper
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon dried rosemary
  • 0.5 teaspoon salt
  • 0.5 teaspoon red pepper flakes optional

Herb Butter

  • 8 tablespoons unsalted butter room temperature
  • 1.5 teaspoons lemon zest
  • 1 clove garlic finely minced
  • 1.5 tablespoons chopped fresh chives

Instructions
 

Preparation

  • Place your London Broil or flank steak on a cutting board and use a meat mallet to gently pound both sides, breaking down connective tissue for extra tenderness.
  • In a large freezer bag, combine the marinade ingredients and stir or shake until thoroughly blended. Set aside 2 tablespoons of marinade for drizzling later.
  • Add the steak to the bag. Remove extra air, seal tightly, and massage the marinade into the meat through the bag.
  • In a medium bowl, combine softened butter and herb ingredients. Mash together until completely blended.
  • Scoop the blended butter mixture onto a sheet of plastic wrap. Shape into a log and refrigerate until firm.

Cooking

  • Remove steak from the marinade and place on a foil-lined baking dish. Let it come to room temperature for 20 minutes.
  • Preheat your oven’s broiler to high and cook the steak for 5-7 minutes per side, checking for doneness with a meat thermometer.
  • Transfer the steak to a cutting board and rest for 10 minutes before slicing.

Notes

Serve immediately with the herb butter on top.
