Equipment

  • Skillet

Ingredients

Steak

  • 1 to 1 ¼ pounds top sirloin, tri-tip, ribeye, or strip steak
  • Kosher salt to taste
  • freshly ground black pepper to taste
  • 3 tablespoons unsalted butter divided
  • 4 to 6 cloves garlic chopped
  • 1 tablespoon fresh parsley for garnish, optional

Instructions

Preparation

  • Cut the steak into approximately 1 ½-inch pieces and pat them dry with a paper towel. Sprinkle with salt and pepper on all sides.
  • Heat a large skillet over medium heat for about 3 minutes, then add 1 tablespoon of butter. When the butter begins to sizzle, add the steak bites in a single layer.
  • Sear the steak bites without moving them for about 3 minutes, then flip and sear until they're well browned, about 2 to 3 minutes more.
  • Turn the heat down to medium-low. Add the remaining 2 tablespoons of butter and chopped garlic to the pan. Sauté until the garlic is cooked through, about 2 to 3 minutes.
  • Remove the pan from heat, return the steak bites to the pan, and toss to coat with garlic butter. Transfer to a serving dish and sprinkle with parsley if desired.

Notes

For the best flavor, use fresh ingredients and a good quality steak.
