Chicken and Potatoes
- 1 lb chicken breasts cut into cubes
- 4-5 small/medium russet potatoes
- 2 tablespoon butter
- ½ teaspoon salt
- ½ teaspoon pepper
- 1 teaspoon paprika
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 1-2 tablespoon minced garlic
- 1 cup shredded mozzarella cheese
- olive oil for potatoes

Cooking Instructions
Wash potatoes, peel them, and cut them up into small cubes.
Toss the potatoes with olive oil, salt, pepper, garlic powder, and paprika.
Cook the potatoes in the air fryer at 400 degrees F for about 25 minutes, shaking them around at least a couple of times.
Once the potatoes are halfway through cooking, cut the chicken into cubes.
Cook the chicken in a skillet on medium-high heat with 2 tablespoon of butter.
Season the chicken with ½ teaspoon each of salt and pepper, and 1 teaspoon each of paprika, onion powder, and Italian seasoning.
Once the chicken is finished cooking, add minced garlic and the Parmesan Garlic sauce. Use just enough sauce to coat the chicken.
Add the crispy cooked potatoes to the skillet and stir well.
Top with shredded mozzarella cheese.
Broil in the oven for just a few minutes to melt the cheese.
