For the Peppers
- 4 pieces Roasted red peppers preserved in brine
- 1 piece Optional: hot red pepper for a spicy kick
For the Filling
- 200 grams Feta cheese crumbled
- 2 tablespoons Olive oil extra for drizzling
- 1 teaspoon Dried oregano
- 1 clove Garlic minced
- 1 small Onion thinly sliced

Preparation Steps
Preheat your oven to 200°C / 392°F.
Drain the roasted red peppers from the brine and set them aside.
Crumb the feta cheese in a small mixing bowl using a fork until mushy.
Combine all remaining ingredients except for the onion slices into the bowl with the feta.
Stuff each drained pepper generously with the feta mixture, placing them snugly in a baking dish.
Top the stuffed peppers with onion slices, sprinkle with pepper, and drizzle with olive oil and oregano.
Bake in the preheated oven for about 15 minutes or until the peppers are tender.
