Ingredients
  

For the Peppers

  • 4 pieces Roasted red peppers preserved in brine
  • 1 piece Optional: hot red pepper for a spicy kick

For the Filling

  • 200 grams Feta cheese crumbled
  • 2 tablespoons Olive oil extra for drizzling
  • 1 teaspoon Dried oregano
  • 1 clove Garlic minced
  • 1 small Onion thinly sliced
  • to taste Freshly ground pepper

Preparation Steps

  • Preheat your oven to 200°C / 392°F.
  • Drain the roasted red peppers from the brine and set them aside.
  • Crumb the feta cheese in a small mixing bowl using a fork until mushy.
  • Combine all remaining ingredients except for the onion slices into the bowl with the feta.
  • Stuff each drained pepper generously with the feta mixture, placing them snugly in a baking dish.
  • Top the stuffed peppers with onion slices, sprinkle with pepper, and drizzle with olive oil and oregano.
  • Bake in the preheated oven for about 15 minutes or until the peppers are tender.
