Ingredients
  

Sponge Cake or Lady Fingers

  • 1 cup Pistachio Cream See below for recipe link
  • 8-10 tablespoons Milk Divided, used to soak the layers

Mascarpone Filling

  • 1 large Egg Optional, can use powdered sugar instead
  • 2 tablespoons Granulated Sugar Use powdered sugar if omitting egg
  • 1.5 cups Whole/Whipping/Heavy Cream
  • 1.5 cups Mascarpone

Instructions
 

Preparation

  • Slice the sponge cake into 2 layers or prepare lady fingers.
  • In a blender, combine the pistachio cream and milk until creamy.
  • Layer the sponge cake on a plate, drizzle with milk, and spread half of the pistachio cream. Refrigerate.
  • In a large bowl, beat egg and sugar, then add cream and mascarpone until thick for the mascarpone filling.
  • Top the first layer with half mascarpone filling, add second layer, drizzle with milk, and spread remaining pistachio cream and mascarpone filling. Refrigerate for 3-4 hours or overnight.
  • Before serving, sprinkle with chopped pistachios if desired.

Notes

Keep in the fridge in an airtight container for 2-3 days or freeze for up to two weeks. Thaw in the fridge overnight before serving.
