Ingredients
  

Cake Ingredients

  • 9 oz cream cheese softened to room temperature, about 70°F
  • 0.85 cup butter preferably Kerrygold unsalted butter
  • 1.85 cups sugar
  • 4 eggs
  • 3.25 cups cake flour preferably King Arthur cake flour
  • 2 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.75 teaspoon salt
  • 1 cup strawberry puree strained to remove seeds
  • 2.5 teaspoon strawberry extract
  • 0.25 cup vegetable oil
  • pink coloring gel
  • 0.5 cup sugar for lemon syrup
  • 0.33 cup water
  • 3 tablespoon lemon juice freshly squeezed

Frosting Ingredients

  • 1.6 cups butter for lemon frosting
  • 9 oz cream cheese preferably Philadelphia brand
  • 0.25 cup lemon juice for frosting
  • 1.75 teaspoon lemon extract
  • 1.5 lemons zest finely grated
  • 7.75 cups powdered sugar

Garnish

  • 10 strawberries sliced into ¼-inch pieces
  • lemon wedges for serving

Instructions
 

Cake Preparation

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, beat together cream cheese and butter until creamy.
  • Add sugar gradually and mix well.
  • Add eggs, one at a time, mixing well after each addition.
  • In another bowl, combine flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients.
  • Fold in strawberry puree and extract.
  • Add vegetable oil and mix until well combined.
  • Add pink coloring gel to reach desired color.
  • Pour batter into prepared cake pans.
  • Bake for 30-35 minutes or until a toothpick comes out clean.
  • Let cakes cool in the pan for 10 minutes, then transfer to a cooling rack.

Lemon Frosting Preparation

  • In a mixing bowl, beat butter and cream cheese until smooth.
  • Add lemon juice and lemon extract, then mix well.
  • Gradually add powdered sugar until desired consistency is achieved.

Assembly

  • Place one cake layer on a serving plate, spread frosting on top.
  • Add second layer of cake and frost the top and sides.
  • Garnish with sliced strawberries and lemon wedges.

Notes

Store cake in the refrigerator to keep it fresh.
