For the Pudding

  • 1 cup Granulated Sugar Substitute with caster sugar for a finer texture.
  • 4 cups Mixed Berries Use blackberries, raspberries, blueberries, and strawberries.
  • 4 slices White or Brioche Bread Brioche adds richness; white bread is more traditional.

For the Topping

  • 1 cup Heavy Cream Can be served whipped or unwhipped; dairy-free alternative available.

Method

  • In a saucepan, mix the sugar and water over medium heat. Stir continuously until the sugar dissolves, creating a sweet syrup.
  • Add your mixed berries to the saucepan and gently cook them just until they're softened but still intact, about 5 minutes. Strain the mixture to capture the vibrant juices.
  • Take a 4-cup bowl and cut a circle of bread for the bottom. Cut rectangles for the sides, ensuring you soak these pieces in the berry juice until fully absorbed.
  • Place the soaked bread pieces snugly around the edges of the bowl, making sure there are no gaps. Pour in the cooked berries and their juice, then cover with another piece of soaked bread.
  • Weigh down the bowl with a plate and a heavy object. Refrigerate for at least 8 hours to allow the pudding to set firmly.
  • Once set, carefully invert the pudding onto a serving plate. Slice and serve it up with a generous dollop of cream or ice cream for a delightful finish.
