Making the Tart

  • Make the Crust: Blend the all-purpose flour and powdered sugar in a bowl. Cut in the cold, unsalted butter until it resembles coarse crumbs. Press into a tart pan and chill for at least 30 minutes.
  • Blind Bake: Preheat your oven to 350°F (175°C). Line the crust with parchment paper and fill with pie weights. Bake for 15-20 minutes until golden brown. Let cool fully.
  • Prepare Lavender Filling: In a saucepan, heat heavy cream and whole milk with culinary lavender until it simmers. Let it steep for 15 minutes, then strain to remove the lavender buds.
  • Mix Custard: Whisk egg yolks and granulated sugar until pale and creamy. Gradually temper with the infused cream while whisking constantly. Combine well and pour into the cooled crust.
  • Bake Tart: Bake at 325°F (160°C) for about 25-30 minutes until the custard is set with a slight jiggle. Cool at room temperature, then refrigerate for at least 2 hours before serving.
