Coating

  • ½ cup Panko breadcrumbs
  • ½ cup grated parmesan cheese
  • 2 cloves garlic, grated
  • 2 tablespoons dried parsley
  • 2 tablespoons dried basil
  • 1 teaspoon dried thyme
  • chili flakes
  • salt and pepper
  • 6 tablespoons salted butter, melted
  • 2 tablespoons lemon juice

  • Preheat the oven to 425°F. Line a baking sheet with parchment paper.
  • In a shallow bowl, combine the panko, parmesan, garlic, parsley, basil, thyme, chili flakes, salt, and pepper. Pour the melted butter into a separate bowl.
  • Dip each halibut filet into the melted butter, then dredge in the panko mixture, pressing to ensure an even coating.
  • Arrange the filets on the prepared baking sheet. Drizzle with any remaining melted butter. Bake for 15-20 minutes, until crisp and golden on top and the fish flakes easily with a fork.
  • Finish with a squeeze of fresh lemon juice and a sprinkle of extra parmesan and flaky salt.
