Preparation Steps

  • Marinate the steak: Whisk together orange juice, lime juice, garlic, cilantro, cumin, chili powder, smoked paprika, chipotle powder, salt, and pepper. Place flank steak in a gallon-size bag, pour the marinade over, and refrigerate for at least 2 hours, preferably overnight.
  • Preheat broiler: Position an oven rack at the highest level and preheat the broiler to high.
  • Prepare the steak: Remove the steak from the marinade, pat it dry with paper towels, and discard the marinade.
  • Broil the steak: Place the steak on a foil-lined broiler pan. Broil for 4 minutes on one side, then flip and broil for another 2-3 minutes or until desired doneness.
  • Let it rest: Tent the cooked steak with foil and let it rest for at least 10 minutes before slicing against the grain.
  • Heat tortillas: Warm corn tortillas in a toaster oven or on the stovetop for about 30 seconds per side until soft and pliable.
