Ingredients
  

Chicken and Sandwich

  • 2 pieces organic skinless, boneless chicken breasts sliced in half lengthwise to create 4 cutlets
  • 1 cup buttermilk divided use
  • Tabasco sauce to taste
  • 1 teaspoon salt
  • 2 cloves garlic pressed through garlic press
  • 1.5 cups flour
  • 1 teaspoon black pepper
  • 1 teaspoon granulated garlic
  • 1 teaspoon granulated onion
  • 0.5 teaspoon paprika
  • 0.5 teaspoon Italian seasoning
  • 0.25 teaspoon cayenne pepper or more for extra spice
  • peanut oil for frying
  • 0.25 cup grated or shredded parmesan cheese
  • 4 slices mozzarella cheese
  • 4 buns toasted
  • romaine leaves for topping
  • tomato slices for topping
  • 4 strips crispy bacon cut in half for topping

Creamy Garlic-Parmesan Sauce

  • 1 cup sour cream
  • 0.25 cup mayonnaise plus 2 tablespoons
  • 0.25 cup grated parmesan cheese
  • 2 cloves garlic
  • 1 units lemon zested
  • 2 teaspoons lemon juice
  • 0.5 teaspoon freshly cracked pepper
  • 0.25 teaspoon salt plus an extra pinch if needed

Optional Side

  • 2 large organic russet potatoes washed, scrubbed, and dried, sliced into thick matchsticks

  • 0.25 teaspoon paprika

Instructions
 

Preparation

  • Place the chicken cutlets into a medium-size bowl, and pour over the buttermilk. Add Tabasco sauce to taste, salt, and pressed garlic; mix and marinate for at least 20 minutes, up to 24 hours.
  • Prepare the creamy garlic-parmesan sauce by processing all ingredients until smooth and store in the fridge.
  • For the flour coating, mix flour, black pepper, granulated garlic and onion, paprika, Italian seasoning, cayenne pepper, and 1 ½ teaspoons of salt in a large bowl. Drizzle in buttermilk and mix to create 'chunky' flour bits.
  • Coat the chicken by taking it out of the buttermilk, letting excess drip off, press into seasoned flour, and place on a plate. Repeat until all cutlets are coated, optionally double-dredging for extra crispiness.
  • In a Dutch oven, heat 4-6 cups of oil to 365°F. Fry 2 chicken breasts in batches for about 6 minutes total, turning frequently until golden-brown and cooked through.
  • Remove from oil and drain on a wire rack or paper towel-lined plate. Allow to rest for a few minutes.
  • Top chicken with parmesan cheese, followed by mozzarella cheese. Broil on low until cheese melts.
  • Assemble sandwiches with creamy garlic-parmesan sauce on buns, add romaine, fried chicken, tomato slices, and crispy bacon. Serve hot.

Optional Side (Sea Salt Baked French Fries)

  • Preheat the oven to 400°F and line a baking sheet with foil misted with cooking spray.
