Ingredients
  

  • 1 pound steak (sirloin or ribeye), cut into bite-sized pieces
  • 1 pound baby potatoes, halved
  • 1 large onion, diced
  • 1 piece bell pepper (any color), diced
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • ½ teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped

Instructions
 

  • Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add halved baby potatoes along with salt, black pepper, garlic powder, and dried thyme. Cook for 15-20 minutes until tender and golden brown. Set aside.
  • In the same skillet, add another tablespoon of olive oil and increase heat to medium-high. Add steak pieces seasoned with salt and pepper; cook for about 4-5 minutes until browned to your liking. Remove from skillet and set aside.
  • If needed, add another tablespoon of olive oil. Sauté diced onion and bell pepper for about 5-7 minutes until tender.
  • Return cooked steak and potatoes to the skillet; mix thoroughly and heat through for an additional 2-3 minutes. Optionally sprinkle red pepper flakes for added spice.
  • Serve hot, garnished with fresh parsley.
