- 1 pound steak (sirloin or ribeye), cut into bite-sized pieces
- 1 pound baby potatoes, halved
- 1 large onion, diced
- 1 piece bell pepper (any color), diced
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- ½ teaspoon red pepper flakes (optional)
- 2 tablespoons fresh parsley, chopped
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add halved baby potatoes along with salt, black pepper, garlic powder, and dried thyme. Cook for 15-20 minutes until tender and golden brown. Set aside.
In the same skillet, add another tablespoon of olive oil and increase heat to medium-high. Add steak pieces seasoned with salt and pepper; cook for about 4-5 minutes until browned to your liking. Remove from skillet and set aside.
If needed, add another tablespoon of olive oil. Sauté diced onion and bell pepper for about 5-7 minutes until tender.
Return cooked steak and potatoes to the skillet; mix thoroughly and heat through for an additional 2-3 minutes. Optionally sprinkle red pepper flakes for added spice.
Serve hot, garnished with fresh parsley.
