Swedish Meatballs (homemade Ikea Meatballs)

Juicy Swedish Meatballs smothered in creamy gravy, made extra soft with soaked bread and grated onion.

Ingredients
  

Meatballs

  • 2 slices white sandwich bread crusts removed, chopped into small cubes
  • 1 small onion brown, white or yellow
  • 300 g ground beef mince
  • 300 g ground pork mince or sub with more beef
  • 1 large egg
  • ¼ teaspoon ground nutmeg preferably freshly grated
  • ¼ teaspoon All Spice powder
  • ¼ teaspoon black pepper
  • ¾ teaspoon salt
  • 1 tablespoon oil

Gravy

  • 40 g butter unsalted
  • 3 tablespoon flour
  • 2 cups beef broth/stock salt reduced or sub with chicken
  • ½ cup heavy cream thickened cream

Instructions
 

Preparation

  • Grate onion using a standard box grater.
  • Scrape onion and juices into a bowl. Add bread and mix well - onion juice should make bread soggy.
  • Add remaining Meatball ingredients EXCEPT oil. Mix well.
  • Measure out heaped tablespoons of mixture and roll into shape.

Cooking

  • Heat 1 tablespoon oil in a skillet over medium high heat. Brown half the meatballs for about 3 minutes.
  • Remove onto a plate and brown the remaining batch.
  • Pour off excess oil if necessary and lower the heat to medium.

Gravy

  • Add butter into skillet and melt. Add flour and stir in. Cook for 1 minute.
  • Gradually add beef broth while mixing until liquid thickens.
  • When simmering, add meatballs and juices pooled on plate.
  • Cook for 8-10 minutes until gravy thickens, stirring occasionally.
  • Add cream and simmer for a further 2 minutes then remove from stove.
  • Serve over mashed potato or Cauliflower Mash.

Notes

Use plain white sandwich bread, and a mix of pork and beef for authentic flavor.
