Ingredients
  

Crust

  • 1.5 cups all-purpose flour [spooned & leveled]
  • 1 Tablespoon granulated sugar
  • ¼ teaspoon salt
  • ½ cup cold unsalted butter cubed
  • ¼ cup ice-cold water plus more as needed
  • 1 large egg beaten for egg wash
  • 1 Tablespoon milk for egg wash

Crumble Topping

  • ½ cup packed brown sugar light or dark
  • 1 teaspoon ground cinnamon
  • ¾ cup all-purpose flour [spooned & leveled]
  • ¾ cup chopped walnuts
  • 5 Tablespoons unsalted butter melted and slightly cooled

Filling

  • 10 cups apple slices (about 8 large peeled and cored apples)
  • ½ cup granulated sugar
  • ¼ cup all-purpose flour [spooned & leveled]
  • 1 Tablespoon fresh lemon juice
  • 1.5 teaspoons ground cinnamon
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground nutmeg
  • 1 teaspoon pure vanilla extract

Instructions
 

Pie Assembly

  • Make the pie dough for the crust: In a medium bowl, whisk together the flour, sugar, and salt. Cut in the butter until it resembles coarse crumbs. Add water and stir until moistened. Turn onto a floured surface and form into a disc. Refrigerate for at least 2 hours.
  • Make the crumble topping: In a medium bowl, combine brown sugar, cinnamon, flour, and walnuts. Stir in melted butter and refrigerate.
  • Roll out the chilled pie dough on a floured surface to a 12-inch diameter. Place it in a 9-inch pie dish and flute the edges.
  • Make the filling: Combine apples, sugar, flour, lemon juice, cinnamon, cloves, nutmeg, and vanilla, stirring until coated.
  • Preheat oven to 400°F (204°C). Place a baking sheet on bottom rack. Spoon apple filling into crust and sprinkle with crumb topping.
  • Bake for 20 minutes, then shield edges and reduce temperature to 375°F (191°C) for an additional 35-45 minutes until golden brown.
  • Allow to cool for at least 3 hours before serving.

Notes

This pie can be made a day in advance and keeps well. Pie crust dough can be prepared ahead of time and stored. Baked pie freezes well for 3 months.
