Ingredients
  

Tomato Mixture

  • 2 pounds ripe tomatoes about 5 to 6 medium tomatoes
  • 0.5 teaspoon fine sea salt plus more to taste
  • 0.5 cup finely chopped white onion about ½ medium
  • 0.5 cup chopped fresh basil about ¾ ounce
  • 2 cloves garlic pressed or minced

Bread and Topping

  • 1 baguette French bread
  • 4-5 tablespoons extra-virgin olive oil divided
  • Thick balsamic vinegar optional drizzle and Maldon flaky sea salt

Instructions
 

Preparation

  • Preheat the oven to 450°F. Line a large, rimmed baking sheet with parchment paper.
  • Dice the tomatoes and transfer them to a medium mixing bowl. Stir in the salt, onion, basil, and garlic. Set aside to marinate.
  • Slice the baguette diagonally into pieces no wider than ½-inch. Brush both sides of each slice with olive oil.
  • Place slices on the baking sheet and bake for 6 to 9 minutes until crisp and golden. Transfer to a serving platter.
  • Drain excess tomato juice from the bowl and add the remaining olive oil. Adjust salt and garlic to taste.
  • Top each toast with the tomato mixture and drizzle with balsamic vinegar. Serve immediately.

Notes

Can prepare the tomato mixture up to 2 days in advance. For gluten-free, use gluten-free bread or serve with gluten-free crackers.
