Ingredients
  

Base ingredients

  • 6 pieces eggplants
  • 5 pieces potatoes optional
  • vegetable oil for frying the eggplants

For the meat sauce

  • 750 g beef or lamb mince (26 oz)
  • 2 pieces red onions chopped
  • 2 cloves garlic chopped
  • 1 tin chopped tomatoes (400g / 14oz)
  • 2 tablespoon tomato paste
  • 1 teaspoon sugar
  • 1 glass red wine
  • sea salt and freshly ground black pepper to taste
  • 1 piece bay leaf
  • 3–4 pieces whole cloves optional
  • cinnamon a pinch or one stick
  • 0.25 cup olive oil

For the bechamel sauce

  • 900 ml milk (31 fl. oz)
  • 120 g butter (4 oz)
  • 120 g flour (4 oz)
  • nutmeg a pinch
  • 2 pieces egg yolks
  • 100 g Parmigiano-Reggiano or Kefalotyri or your favourite hard cheese (3.5 oz)
  • salt to taste

Instructions
 

Preparation

  • Slice the eggplants and potatoes, then fry the eggplants in vegetable oil until golden brown.
  • Prepare the meat sauce by cooking the minced meat with onions and garlic, then adding the rest of the meat sauce ingredients.
  • For the béchamel sauce, melt the butter, stir in flour, then gradually add milk. Finish with egg yolks and cheese.
  • Layer the fried eggplants, meat sauce, and béchamel sauce in a baking dish.
  • Bake in a preheated oven until bubbly and golden.

Notes

Let the moussaka rest before serving for best flavor.
