Ingredients
  

Base Ingredients

  • 2 tablespoon extra virgin olive oil
  • 1 medium sweet organic onion sliced to about ½” thickness
  • 4 cloves garlic minced
  • 1 teaspoon pink or sea salt
  • ½ teaspoon cracked pepper
  • 2 cups shitake mushrooms whole
  • 2 cups sliced baby bella or cremini mushrooms
  • 4 cups chicken or vegetable broth organic and gluten-free
  • 2 cups organic kale roughly chopped into bite sized pieces
  • ½ cup coconut milk or coconut cream

Instructions
 

Preparation Steps

  • In a large pot, heat the olive oil over medium heat and add the sliced onion. Cook until caramelized.
  • Add minced garlic and cook for another minute.
  • Stir in the salt and cracked pepper.
  • Add the shitake and baby bella mushrooms, cooking until they are tender.
  • Pour in the broth and bring to a boil.
  • Add the kale and simmer until it wilts.
  • Stir in the coconut milk and adjust seasoning as needed.

Notes

For a richer flavor, use homemade broth if available.
